Butter pies with filling

The butter dough for these pies is made only with yolks, the dough is made with milk, and sour cream is always added to the dough. Therefore, it turns out to be as soft and airy as Easter cakes. Even the next day these remain as fresh. And for the filling to be tasty, the carrots must be juicy and sweet. It is better to take apples for the filling that are firm, sweet and aromatic.

Dry yeast "Pakmaya". I just like to use them most when baking. They rise well and never have any punctures. Of course, you can use other yeast, but you must act according to the recommendations indicated on the package. You can also use regular compressed yeast. Then you need to take about 50-70 grams of yeast and also dilute it in warm milk.

Ingredients you will need for the pastry:

  • 300 ml milk;
  • 100 grams of margarine;
  • 75 grams of sugar;
  • 3 yolks;
  • 2 pinches of salt;
  • 2 tablespoons sour cream;
  • 5 glasses of flour;
  • 1.5 teaspoons yeast (Pakmaya or others);
  • a pinch of vanillin;
  • oil for greasing the baking sheet;
  • egg for brushing pies.

For the filling:

  • 1 carrot (large);
  • a pinch of citric acid;
  • 4 apples;
  • sugar to taste.

How to make butter pies

Prepare the dough. To do this, pour warmed milk into a large bowl, add yeast and a teaspoon of sugar.

Stir and leave for a few minutes.

When the yeast has dissolved, add the remaining sugar, salt and 1 cup of flour. Stir with a whisk. Cover with a lid and place in a warm place to rise.

Place the egg yolks in another bowl and beat lightly with a fork. Add sour cream to them and stir well.

Melt the margarine, cool it slightly and pour it into the yolk mixture. Stir.

When the dough rises, add the egg-butter mixture to it and stir.

Add flour, vanillin and knead into a viscous dough.

Cover the bowl with a lid and leave to rise again. When the dough has risen, punch it down and let it rise again.

In the meantime, prepare the filling. Grate with a special grater into thin strips. If you don’t have one, then use a regular grater.

Core the apples and grate them too.

Add citric acid and stir. Transfer the filling to another plate while gently squeezing out the juice.

Sprinkle the table well with flour (the amount is not included in the recipe) and place the dough on it. Fold the edges towards the middle and knead into a very soft dough. Sweep excess flour to the side.

Cutting equal pieces from the dough, make donuts out of them. Let them rise, covered with a towel.

Mash each donut with your fingers into a flat cake and place the filling in the middle. Add some sugar.

Make the pies.

Let the pies rise again. As you can see, the dough should rise several times during the cooking process. Only then will the finished ones turn out soft and airy.

Place them seam side down on a baking sheet coated with oil. Brush with egg.

Preheat the oven to 200°. Place the pies. They bake for exactly 20 minutes. Cool them slightly on the baking sheet and only then remove them to a plate.

First of all, you need to prepare all the ingredients necessary for preparing our baked goods. Measure out the amount of sugar and ground cinnamon. Sift the flour, wash the apple and carrots. Remove the eggs from the refrigerator in advance so that they are at room temperature.

Beat eggs into a bowl for preparing carrot and apple pie dough. Add the amount of granulated sugar and prepare a whisk for whipping. If you don't have a whisk, use two forks placed together; they can be used to beat eggs very easily.

If desired, eggs and sugar can be beaten with a mixer, but you can also use a whisk lush pie with apples and carrots. Beat the ingredients until foamy and set them aside.

Grate the apple and carrots onto a coarse grater and add them to our dough. Add our most aromatic ingredient - cinnamon. It is the cinnamon that will give the pie a truly divine aroma. If you don't like cinnamon, you can replace it with vanilla, ginger or lemon zest. Even if you don't add any flavoring to the dough, the apple and carrots will give your pie a pleasant taste.

The next step is to add flour. Mix the mixture until a pourable dough forms, with the consistency of thick sour cream.

Pour the finished dough into a mold pre-greased with oil and parchment. Level the top of the carrot-apple pie and place it in the preheated oven. Bake for half an hour.

Remove the finished pie from the oven, remove it from the mold and let it rest a little. When the cake has cooled slightly, sprinkle it with powdered sugar. Cut the oven-baked apple-carrot pie into pieces and serve.
