The recipe for making yeast-free croissant dough involves using the following products:

  1. Baking powder - 2 tsp;
  2. Sour cream - 1 cup (sour cream should not be too liquid);
  3. Butter (butter) - 200 - 250 g;
  4. Flour - 3-4 cups (you may need a little more);
  5. Jam (any) - used as a filling;
  6. Walnut (walnut) - goes into jam.

Preparation of the base without yeast:

  • Mix baking powder, sour cream, butter. Add flour little by little to the resulting consistency;
  • Knead the dough until elastic and put it in the refrigerator for 20-40 min. This is necessary for it to infuse;
  • Take a small piece of the base and roll it out into a thin layer. Cut it the same way you usually cut pizza (in triangles). Place jam and nuts on the edge. Make blanks;
  • Place the croissants on a baking sheet, on which special paper is previously laid out;
  • Bake at a temperature not lower than 180 degrees. It is necessary to bake until a golden crust appears.

With vodka

The recipe for making bagels is based on ingredients such as:

  • Flour - 2 cups (you may need a little more);
  • Yolk - 1 piece;
  • Vodka - 1 tbsp;
  • Water - 0.5 cups;
  • Butter (can be replaced with margarine) - 100 g;
  • Salt is added to taste.

To obtain puff pastry, follow these steps:

  • Mix oil with 3 tbsp. flour. Make a small rectangle from the resulting consistency and set it aside;
  • Make a hole in the pile of sifted flour;
  • Add the yolk, water, salt, and vodka to the hole formed. Start kneading the dough. Don't knead it for long;
  • Wrap the base in cling film and leave to infuse in a cool place for 30-45 minutes;
  • Roll out the layer and place a piece of butter in the center. You can roll it with your hands until it completely dissolves in the base, or you can use cling film. To do this, place a piece of butter in the center, take cling film and place it on the butter. Roll the oil over the entire base in a circular motion until it is completely hidden in it;
  • Cut off all excess, cover up one side, and leave the other untouched;
  • Fold the base in 3 layers. It is important that the open sections are folded towards the middle. After this, it must be folded in half again;
  • Roll out the base to the same size. In this case, you need to roll out from the edges to the center. At this stage, add the set aside piece of base;
  • Fold the dough into two layers;
  • Cover the base with film and place it on 30 min. in the refrigerator. This is necessary for the dough to cool;
  • Take out the base and roll it back to its original size;
  • Place back in the refrigerator for 30-40 min.

To obtain puff pastry, you need to make at least 6 folds.
