But the most important rule is how to cook homemade noodles - only the correctly selected proportions of ingredients. Please note that our recipe uses a large egg. Therefore, the most correct proportions can be considered the proportions of one large egg, one hundred grams of flour, a pinch of salt and one teaspoon of butter at room temperature. If for some reason you do not use butter, then you can take vegetable oil, but not more than 1 teaspoon. With these proportions, the dough will be very elastic and difficult to knead. This is right. If you have small eggs, you can add one to two teaspoons of boiled water. Just don’t forget that the dough for homemade noodles should be tight.
Place flour in a bowl or directly on the counter. Beat the egg and salt into the well you made by hand.

2. First, use a fork to combine the egg with some of the flour and add the butter. The butter does not need to be melted. Just don't put it in the refrigerator and it will be soft.

3. Knead the dough very well.
Advice: You can determine the readiness of such a test by making a small incision. If you cut the dough and see no layers inside, then it is ready. And if you don’t have time to knead the dough or are just lazy, then place it in a plastic bag for 30 minutes. After the specified time, the dough will be almost ready. At the very least, you only need to knead it for a couple of minutes.

4. Cut the resulting dough in half. Thanks to the butter, it can be rolled out on a bare counter without flour. The pancake for homemade noodles is made like chebureki, that is, very thin. You can see your hands through it.

5. Leave the rolled pancake on the table for 10 minutes. Then turn it over and record the same time. This way we will dry the dough a little so that we can prepare homemade noodles in the best possible way. This way the vermicelli will not stick together when cutting.

Ingredients

Kneading dough in the bread maker- This is the first step in preparing a homemade noodle recipe. Pour water into the bread maker bowl and beat in the egg.

    At the end of the first kneading, the dough should form into a bun.

    After resting, it will be smooth and pliable.

    Forming noodles- This is the second stage of preparing the homemade noodles recipe.

    Place the dough on a floured table and knead it a little.

    Divide into 6 parts.

    Place 5 parts in a bowl and cover with a towel or bag so that the dough does not dry out.
    Carefully roll out 1 piece with a rolling pin.

    Drying noodles. This is the 3rd stage of making homemade noodles - the recipe takes a long time to tell, but in reality it’s less hassle.

    Homemade noodles can be dried in two ways: in the air and in the oven.

    If you dry it in the oven, it is better to do it at a low temperature - 50-60 degrees - and use the convection mode.

    In the oven. So, unroll the strips and place them on a baking sheet sprinkled with flour. Place in a preheated oven.

    After 30-40 minutes, the noodle strips will become dry. Take out the baking sheet and let the noodles cool.

    You can dry the noodles in the air, laid out on a flat surface, such as a board. But it’s better to hang the strips on a kitchen rail or a regular hanger with a crossbar. Then they will dry faster and more evenly, and after drying they will retain their even shape.

    The noodles dry in the air for about 4-5 hours. Remove the finished strips, wrap them and place them in a storage container.

    These noodles are cooked for 5-7 minutes after the water boils. Delicious!

We will use the rested dough to prepare noodles using a machine. Divide the dough into 4 parts. Roll out each part very thinly. The thinner the dough we roll out, the more beautiful the noodles will be. Place a colored towel under the dough and if the patterns are visible, the dough is ready. While we were rolling out the fourth cake, the first one dried out slightly, which is what we needed.

Gently separate the noodles with your fingers and dry them. Can be used immediately, or can be completely dried and stored in paper bags or boxes.

To prepare noodles on a machine, we also do not divide the dough, but roll it into a long sausage and flatten it by hand. And then we pass it through the machine. At the same time, we instruct division number 1. Then we change the divisions from the thickest to the thinnest, without skipping, in any case, a single division. If you skip divisions, the dough will tear. Roll out the thinnest dough.

We cut the long strip into pieces, the length of which is equal to the length of the noodles. Then we pass it through the slicing slot and cut the thinnest noodles.

Leave the noodles to dry, sprinkle with flour, and turn over from time to time. When the noodles dry, transfer them to a paper bag or cardboard box in which we will store them.

    We will need the following products:

    • Rice flour – half a kilogram;
    • Chicken eggs – 3 pieces;
    • Water – 1 large spoon;

    Then cut the noodles, they can be short or long. The length of a short noodle is usually equal to its width. To make long noodles, you can roll the dough into a roll, shred it, and then unroll it. To cut noodles, you can use a special wheel with a wavy edge.

    One of the simplest homemade noodle recipes is lean. It only requires water, salt and flour. To prepare lean noodles, you need to take:

    100 milliliters of water; - 200–250 grams of flour; - salt.

    Dissolve salt in warm boiled water. Then sift the flour and pour it onto a table or wooden board in a heap, make a depression, pour salted water into it and knead the dough. The longer you knead it, the tastier the homemade noodles will be.

    500 grams of squid fillet;

    250 grams of peeled shrimp;

    1–2 carrots; - 50 grams of parsley root;

    1–2 heads of onions; - 1 egg;

    200 grams of flour;

    50 grams of butter;

    - ½ teaspoon of salt.

    To make the dough for homemade noodles more elastic, after kneading it must be kept for about 30 minutes.

    To prepare the noodles, pour the flour into a bowl, make a well in the center, add an egg mixed with 1-2 tablespoons of water, salt and knead the dough. Then roll out into a very thin layer (about 1-2 millimeters thick) and cut into strips 5-6 centimeters wide. Then cut each one crosswise again. Let the noodles dry a little and remove any flour from the surface.
