How to properly cook nest pasta. Pasta “Nests” with minced meat. What are "pasta nests"

The combination of pasta with minced meat is found in different cuisines. Based on pasta and minced meat, you can prepare many different dishes: navy pasta, cannelloni, lasagna, Bolognese pasta, casseroles with various sauces, stuffed shells.

Pasta nests are also delicious - one of the most popular types of Italian pasta. You can buy pasta, which looks like bird houses, at any grocery store. You can cook them in a slow cooker or in the oven, but we will cook them in a frying pan.

Let's prepare necessary products for preparing nests of pasta with minced meat in a frying pan.

In the minced meat, which I use mixed (pork + beef), we put onions and garlic, minced through a meat grinder. Add salt and pepper or your favorite spices and mix.

I place the pasta nests in a saucepan (diameter - 24 cm).

Divide the minced meat into equal parts, form balls or flat cakes, and place them on pasta nests.

Pour the salted broth into the saucepan. The broth should cover the pasta nests not completely, but 2/3. Cover the saucepan with a lid and bring to a boil. Reduce heat to low and cook for 20-30 minutes.

As soon as there is almost no broth left at the bottom, sprinkle the contents of the saucepan with grated cheese. Cover with a lid and let the cheese melt.

Serve the pasta nests with minced meat cooked in a frying pan immediately - piping hot, not forgetting to sprinkle with fresh herbs. Bon appetit!

"! Lately, my son has fallen in love with scrambled eggs, and I’ve gotten into the habit of combining them with pasta or other foods. 😀 This is how I was born great option for breakfast when there is uneaten spaghetti left from the evening. By the way, traditionally pasta nests are made from special pasta rolled in a special way. But I still plan to show this version of the dish. 😉 In the meantime, for pasta nests we take ordinary pre-boiled spaghetti...

Let's also take:

  • raw eggs in the amount required for the number of eaters (in my case there were 4 eggs);
  • butter(although it is possible to use a vegetable one, of course);
  • cheese (optional, but it tastes better with it);
  • good mood (this is especially important for breakfast 😉).

So, given that we have already boiled pasta or spaghetti, the process of preparing pasta nests in a frying pan will take literally 5-7 minutes.

Place butter in a frying pan and brush the surface with it. We don’t put it on fire yet - we need to form nests. We twist the spaghetti with a fork, and then carefully remove it into the frying pan to create a nest with a hole in the middle.

Sometimes I have to form a nest more than once, but after a short practice it turns out much better. 🙂

Sprinkle the surface of future nests with grated cheese. Now we put it on a hot burner or on the fire and warm up the macaroni and cheese for about two minutes.

Then add one egg to each nest.

Salt the eggs, cover with a lid and leave on the fire for two to three minutes. Next, you can take a spatula and gently adjust the pasta nests in the pan so that they are more round.

I usually make eggs with a runny yolk—that’s what my son and I like. But you can cook the nests longer. 😉

That's all, actually. A tasty, satisfying, cute breakfast is ready.

Pasta “Nests” with meat filling is a quick and very satisfying second course. Of course, it does not belong to the category of gourmet dishes, but it is just right for an ordinary weekday dinner. In addition, it does not require special culinary skills and its preparation does not take much time.

The combination of pasta with minced meat has been known to everyone for a long time - this includes the favorite navy pasta, lasagna, pasta casserole and stuffed shells.

Pasta “Nests” with minced meat are cooked in the oven, in a frying pan or in a slow cooker. The cooking principle in all variants is quite similar and differs only in the time spent on the cooking process.

How to cook pasta nests with minced meat

The first step in preparing “Nest” pasta with minced meat is preparing the meat filling. Use minced meat, ground from equal parts of beef and pork, with the addition of 1 onion, chopped with a knife or a clove of garlic passed through a press, salt and ground pepper. To make the meat filling more tender, when grinding in a meat grinder, add a piece of soft white bread soaked in milk. Mix thoroughly.

Grease a deep saucepan with vegetable oil and place the pasta in it at a short distance from each other.

Using a fork, place a small heaped amount of meat filling into them and gently press it down.

Add enough water to the pan to completely cover the pasta and lightly add salt. Cover the saucepan with a lid and place over medium heat. Cook the “nests” with meat until fully cooked and soft, about 15-20 minutes. Add water if necessary. Grind the cheese on a fine grater and sprinkle it on each product. Once melted, the cheese will give the dish a creamy taste and make it more flavorful. If you cook “Nests” pasta with minced meat in the oven, then you should not cover the baking dish with a lid, and add the cheese about 5 minutes before the dish is ready. In the case of a multicooker, use the “Baking” mode and cook until sound signal. Also add cheese 5 minutes before the end of cooking.

Serve “Nests” with meat filling in portions or directly on a common platter, lightly sprinkled with fresh herbs.

Cooking tips:

  • add finely chopped fresh herbs, coriander or paprika to the meat filling, they will make the taste of the dish richer;
  • The most suitable additions to pasta with meat would be cream-based sauces to further emphasize the creamy taste of the dish. “Bechamel” will also be very beneficial when combined with meat and pasta.
  • Serve the dish with a fresh tomato salad and a glass of dry red wine.

To prepare this dish, you will need special pasta that has Italian roots - nests (tagliatelle). These pasta products can be bought in almost any store; in fact, they are a type of noodles that are rolled into a circle. The dish, despite its original presentation, is very simple to prepare and does not require any special skills from you. This is not the first time I have prepared such nests of pasta with minced meat in the oven and I would like to note that it is really very tasty! Pasta must first be boiled and then filled with filling, in this case it will be minced meat. The highlight of this recipe will be tomato-sour cream sauce, in which they will be baked. Thanks to him, the dish turns out not only nourishing and tasty, but also very tender and juicy! Let’s finish all this off with a cheese “cap” to give the nests a more appetizing and elegant look. This dish will not only be a luxurious dinner idea for the whole family, but will also be a great idea for festive table. I recommend trying it! A step-by-step recipe with photos is presented below.

Ingredients:

  • 12 pasta nests.
  • 500 grams of minced meat.
  • 2 onions.
  • 1 medium sized carrot.
  • 2 tbsp. spoons of tomato paste or sauce.
  • 2 tbsp. spoons of sour cream of any fat content.
  • 150 grams of hard cheese.
  • mayonnaise to taste.
  • salt and spices to taste.
  • vegetable oil.
  • Number of servings: 12.

For the filling, combine minced meat (I have beef + pork), one chopped onion and add salt and spices of your choice.

Then boil the pasta. To do this, you need to bring salted water to a boil, and then put our pasta nests on the bottom of the pan. We boil the nests in parts so that they lie in one layer. As soon as the pasta is placed in the water, you need to move it a little with a spatula so that the pasta does not stick to the bottom, and after boiling, cook it for no more than 3-5 minutes, depending on the manufacturer, until al dente. You need to pour in enough water to cover the pasta by 1-2 cm.

We take out the finished nests and put them in a baking dish, which must be greased with oil.

For the sauce, fry grated carrots and diced onions. There is no need to fry too much, just enough to soften the vegetables. Then we add tomato paste, sour cream and cook everything together for another 2-3 minutes.

Then pour in 1.5 cups of water, I use the water left after cooking the pasta. Add salt to taste, you can add spices, bring everything to a boil and turn it off. The sauce is ready!

Now we prepare our dish for baking. Fill the pasta nests with minced meat, slightly pushing the middle apart, and press the minced meat with a fork. The nests can be planted either separately from each other or in an even layer, at your discretion.

Pour the prepared sauce over everything, trying to avoid the minced meat.

Then we apply a “cap” of mayonnaise to the minced meat. You can also replace it with sour cream, but our family prefers this option.

Distribute the grated cheese evenly over the mayonnaise.

Bake the nests in the oven at 180-200*C for about an hour. I go by the golden brown cheese crust on top.

All that remains is to cut the dish into portions and serve. Pasta nests prepared according to this recipe are a self-sufficient dish and a side dish is definitely not needed here. The only thing you can add when serving is fresh herbs or any vegetables.

This is how you can prepare a simple, but at the same time, gourmet dinner! The result is an excellent treat that truly no one can resist!

Bon appetit!!!

Best regards, Oksana Chaban.

nest pasta - 250 gr. ;

minced meat - 500 gr. ;

onions - 2 pcs. ;

hard cheese - 150 gr. ;

chicken eggs - 1 pc. ;

tomato paste - 2 tbsp. ;

salt and spices - to taste;

vegetable oil for frying - to taste;

mayonnaise - to taste

To prepare this dish, I used Italian brand pasta,

but similar “Nests” can also be purchased from domestic manufacturers. And if you really want to cook this tasty and extraordinary dish, but similar pasta is not available, then it will be quite possible to replace it with regular spaghetti. To do this, you will need to cook them a little until “al dente” and put them with a fork, twisting them into a “nest”.

So let's get started. To begin with, I'll make minced meat, I have pork. If you have frozen minced meat, you will need to thaw it first. Then prepare all the other ingredients.

Take peeled onions and carrots.

Chop the onion into cubes, grate the carrots on a coarse grater.

Add half the onion to the minced meat.

One raw egg, salt and spices.

Mix well and put aside for now. Three cheeses on a grater.

Set aside. Now we need to boil the pasta a little. Pour water into the pan, add salt and let it boil. Then carefully place the “nests” in water (there should be enough water to lightly cover the pasta).

Boil the pasta in parts in one layer, stirring a little at the beginning until it boils. I used half the pack, it turned out to be 14 pieces, in two batches. Boil for 3-5 minutes after boiling until half cooked. Then carefully take it out with a slotted spoon and place it on some dish. We don’t drain the water from the pasta, we will need it later.

Now let's prepare the filling. Fry the carrots and remaining onions in a small amount vegetable oil. Add sour cream and tomato paste.

Pour in the water left over from cooking the pasta (I got 1.5 cups) and cook the sauce, stirring occasionally for about 5 minutes.

Then grease the baking dish with oil and carefully lay out the “nests”. We stuff the pasta with minced meat, as if pushing it apart with a spoon, freeing up the middle for the filling.

Some chefs suggest stuffing pasta with fried minced meat, but I can assure you that when cooked this way, they turn out more juicy and tender. Now we fill the pasta “nests” with sauce, trying to cover each “nest” and make a mayonnaise cap on each “nest.”

And put it in the oven for 20-25 minutes at 180*c. Then we take it out, sprinkle it with cheese and leave for another 10-15 minutes.

As a result, the sauce is boiled down, and the pasta turns out soft, juicy and incredibly tasty. Serve the finished “nests” in portions, garnished with herbs. Bon appetit!
